Modified Chocolate Chip Cookies

Ingredients
3/4 cup firmly packed brown sugar1/2 cup butter, softened1 tbsp canola oil2 large egg whites2 teaspoons pure vanilla extract1 (19 ounce) can chickpeas, drained and rinsed1 cup semisweet mini chocolate chips1 1/2 cups whole wheat flour1/2 cup wheat bran1/2 cup old fashioned oats1 teaspoon baking soda1/4 teaspoon salt
Directions
1. Preheat the oven to 350 F. Coat a baking sheet with cooking spray.

2. In a large mixer beat the sugar, butter and canola oil until fluffy.

3. Beat in the egg whites and vanilla, then add the chick peas and chocolate chips. Add the flour, wheat bran, oats, baking soda and salt and mix on low speed until a thick dough forms.

4. Drop the dough by tablespoons onto the baking sheet and press with a fork to flatten.

5. Bake for ONLY 12 minutes - do not overbake.

6. Cool and try not to eat all at once!

7. Store in an airtight container for up to 3 days.
