Low-Fat Spiced Pumpkin Bars

Ingredients
1 c egg whites or liquid egg substitutes1 c unsweetened applesauce1 ½ c sugar2 c canned pumpkin2 c flour1 tbsp baking powder1 tsp baking soda½ tsp salt2 tsp cinnamon½ tsp ginger¼ tsp nutmeg¼ tsp clovesPowdered sugar (optional and not included in nutritional information)
Directions
Preheat oven to 375*. Lightly spray a 12 x 18 x1 in pan with nonstick spray. In a large bowl, whisk together egg whites, applesauce, sugar, and pumpkin. Sift or stir together flour, baking powder, baking soda, salt, and spices. Gently fold dry ingredients into pumpkin mixture; do not overmix. Spread evenly in pan. Bake until firm to touch and lightly browned, 20 – 25 minutes. Cool, then slice into 24 bars. If you desire, dust with powdered sugar just before serving. Serving size 1 bar
