Broccoli, White Bean & Cheddar soup

Ingredients
1 14-ounce can reduced-sodium chicken broth or vegetable broth1 cup water1 pound broccoli crowns, trimmed and chopped (about 6 cups)1 14-ounce can cannelli beans, rinsed1/4 tsp. salt1/4 tsp. white pepper1 cup shredded extra-sharp Cheddar cheese
Directions
1) Bring broth and water to a boil in a medium sauce pan over high heat. Add broccoli, cover and continue cooking until tender, about 8 minutes. Stir in beans, salt and pepper and continue cooking until the beans are heated through, about 1 minute.

2) Transfer half mixture to a blender with half the cheese and puree. (Use caution when pureeing hot liquids) Transfer to a bowl. Repeat with the remaining broccoli mixture and cheese. Serve warm.

    Making this recipe caused me to become a sparkperson. I love this soup. I add cauliflower and use soy cheese. I make a big batch so that I can take some for lunch or eat some in the evening when I have a lot of homework. It is delicious! - 3/5/10
