Cornflake Chicken

Ingredients
1 lbs. chicken(boneless skinless)2 tbsp. light mayosaltpepper1 tbsp. parmesan cheese(grated)2 cups corn flakes( crumbled)
Directions
Salt and pepper chicken to taste.
Put mayo and parmesan in a bowl. Set aside.
Put corn flakes in gallon baggie and roll with rolling pin, until finely crumbled. set in another bowl.
Coat chicken with mayo/cheese mixture, and then coat with cornflakes.
Bake at 350, for about an hour until cooked.

    Made this tonight with chicken tenders. It was very moist, but needed a little more flavor for me. Maybe I didn't add enough salt in the beginning. Will definitely make again . . . maybe add something to give it a kick! - 2/16/09
