Mixed Vegetable Stew

Ingredients
2 tbsp olive oil1 whole green pepper1 whole red pepper1 medium onion1 shallot1 can diced tomatoes (drain)1 can black beans (drain)1 can white beans (drain)1 can of corn3 medium sized potatoes1 tbsp cayenne pepper1 tbsp mexican chili powder(Salt & pepper can be adjusted to taste.)
Directions
You'll need a big pot.
Cover bottom of pot with olive oil.

Dice up the peppers & onions & potatoes.
Throw them in first (potatoes take the longest to cook.) Then dice up the shallot and put that in the pot as well.

Then after draining each can,
Add the diced tomatoes & corn.

After the pot as started to simmer and the potatoes seem to be tender enough add both cans of beans.

Once all the ingredients have been added you may season your stew as you'd like.

For me I added the cayenne pepper, then the chili powder and added 1 tbsp of salt & 1 tbsp of pepper. But that's just me you may of course, add your own flavoring.
