Tuna Melt Quesadilla

Ingredients
1/2 can Tuna in water (5 oz. can)1/4 tbs Cumin1/4 tbs Cayenne Pepper1/4 tbs Paprika1/4 tbs Fresh ground pepper1/3 cup Diced tomatoes1/4 cup Chopped onion1/2 cup Cooked spinach1 oz Colby Jack Cheese2 Flour Tortillas
Directions
1) Heat pan over medium high heat. Grade cheese or buy shredded cheese.

2) Drain tuna and mix half in a bowl with the cumin, cayenne pepper, paprika, fresh ground pepper and tomatoes.

3) When the pan is hot, spray with non-fat cooking spray and toss in onions. Cook until slightly brown. Add Spinach and cook until spinach has been reduced to about 1/4 of original volume. Mix well into tuna.

4) Heat tortillas in a dry skillet one at a time for about 20 sec on each side.

5) with one tortilla heating in pan, add half of the cheese. When cheese begins to melt, pour on tuna mixture and spread evenly. Top tuna mixture with the rest to the cheese. Put second tortilla on top and flip.

6) When second tortilla is slightly crispy, remove from pan, cut into quarters and serve.
