Sweet and Sour Chicken

Ingredients
4 chicken breasts (no skin) (cut into strips)1 tbsp olive oil1 red pepper (sliced)1 green pepper (sliced)1 yellow pepper (sliced)1 carrots (sliced)1 cup beansprouts10 fl oz stock made with 1 veg stock cube and 1 chicken stock cube2 tbsp corn flour1 tbsp caster sugar2 tbsp cider vinegar2 tbsp soy sauce1 tbsp ketchup
Directions
Heat olive oil in wok or large pan.
Add chicken and stir until cooked evenly on all sides.
Add peppers, carrots and beansprouts. Stir for about 3 minutes.
Add stock, stir and simmer for 10 minutes.
Make sweet and sour paste by combining cornflour, sugar, cider vinegar, soy sauce and ketchup. Add this to the wok and stir in. Leave for about 2 minutes.
Serve with rice or noodles and enjoy.
