Dharma's Oven Roasted Vegetables

2 cups of coarsely chopped vidalia onions2 cups of cubed sweet potatoes1 medium butternut squash, peeled & cubed 1 cup of green bell pepper strips1 cup of red Bell Pepper strips1 tbsp. extra virgin olive oilKirkland Organic No-Salt Seasoning, to tasteSalt, to taste
Preheat oven to 450 degrees.
Lightly coat a large cookie sheet with olive oil. In a very large bowl, mix all of the vegetables together with the olive oil until well coated. Then, sprinkle seasoning to cover the vegetables.
Bake for 45 minutes, then stir and bake again for 15 to 45 minutes, depending on how well done you like the vegetables. Salt to taste.
Makes about 6-8 one cup servings.
