Grilled Veggie Sandwich

Ingredients
1 LaBrea Bakery ciabatta sandwich roll1 portobello mushroom, average size1/2 red bell pepper, medium size1/2 zucchini, average size1/4 cup (1oz, 28g) mozzarella cheese1 tbsp mayonnaise1 clove garlic, minced1 tsp lemon juiceparsleylemon juice
Directions
Grill the portobello mushroom, red pepper, and zucchini over high heat until soft. Slice the ciabatta roll in half and toast lightly. Add the mozzarella cheese on one side of the roll and toast until melted. Mix the mayonnaise with the lemon juice and minced garlic, and add some parsley, salt, and pepper to taste. Spread the mayonnaise mixture on the other side of the roll. Layer the portobello mushroom, red pepper, and zucchini in the roll, and serve the sandwich hot.
