Tracy Breakfast Egg Bake

Ingredients
2 oz turkey breast pre-cooked, diced1 scallion chopped1/2 cup mushroom chopped3 egg whites1 whole egg
Directions
Chop mushrooms and scallion and saute in skillet for about 5 minutes.

Spray non-stick cooking spray into muffin tins.

Chop precooked turkey into cubes.

Put some of the turkey and some of the mushroom mixture into each muffin tin.

Scramble egg whites and 1 egg adding spices as you desire. Pour evenly over turkey mixture in tin cups.

Bake 350 for 25 minutes.
