Rachel's Cream of Broccoli Soup low fat

Ingredients
3 large heads of broccoli4 red potatoes1 large onion3 cups skim milk2 cups chicken broth2/3 cup powdered buttermilk2 cups cheddar cheese (reduced fat works too)salt and pepper to taste
Directions
Steam broccoli, potatoes (do not remove skin) and onion together.

Blend in a blender or food processer with milk and chicken broth. I use the water at the bottom of the pot from steaming the veggies to make the broth to keep all the nutrients in the soup. I also blend the veggies with the milk+broth mixture in batches because I can't fit it all in at once. Then put in large pot on stove med-high. Add salt and pepper. When boiling, add cheddar cheese and lower heat to med. When cheese is melted, serve!
