Poppy Seed Chicken Casserole

Ingredients
4 boneless skinless chicken breastscontainer of sour cream2 cans of cream of chicken soup3 packs of ritz crackerspoppy seedsbuttercasserole dish
Directions
Boil chicken breasts until fully done. Mix sour cream, cream of chicken soup, and 1 package ritz crackers together into mixture. Melt half a stick of butter in the microwave.
Preheat oven to 350 degrees.
Put chicken in bowl with sour cream, soup, and rirz. Stir until mixed well. Spread one package of ritz on bottom of dish. Pour mixture on top. Sprinkle one package of ritz on top.
Pour melted butter evenly over crackers. Sprinkle poppy seeds all over.

    This is very good & satisfied the whole family. Because the overall calorie count seemed high, I substituted reduced fat sour cream, low-fat soup, used only 15 crackers, and 1/2 stick of margarine. This reduced the dish by about 70 calories. I will definitely make this again. - 9/26/08
