Cabbage Soup

Ingredients
1/2 head of cabbage6 scallions chopped2 green bell peppers2 cans stewed tomatoes3 carrots1 package mushrooms1 bunch celery1 package lipton onion dry mix2 cubes chicken bouillon1 can v88 cups water
Directions
Chop scallions and begin to cook on low in 2 tablespoons of olive oil. Chop bell peppers and add to pot. Choop scallions, carrots, celery, and cabbage and add to pot. Add water, chicken bouillon, and V8 to pot. Stir in Lipton Soup mix. Season with salt, pepper, and parsley to taste.

    This is a good soup for a snack between meals. very filling and satisfying. I like it with a lot of pepper or tabasco sauce. - 3/14/07
