1 T extra virgin olive oil2 garlic cloves, minced1/2 onion, chopped1 zucchini, chopped1 large carrot, chopped2 celery stalks, choppe1 T gingerroot1 28oz can Tomatos, not drained1 T cumin1/2 T dried oregano1/2 t ground black pepper7 oz whitefish fillets7 oz scallops, cut in half1 cup water
heat oil in a large pan, add garlic and onion and cook till soft. add zucchini, carrots, celery and ginger. saute for 5 minutes.
add tomatoes and juice, spices, fish, scallops and water and bring to a boil. reduce heat and simmer for 7-10 minutes.
