Nick Nairn`s ginger, carrot and honey soup

Ingredients
2 tbsp olive oil150gm sliced onions20gms fresh ginger root600 grams raw grated carrots1 tbsp honeyjuice of 1 lemon2 tsp salt5 dashes black pepper27fl oze boiling water
Directions
Heat olive oil and cook onions..........crush ginger root and add to onions.....let sweat for 10 mins.

Add all remaining ingredients and bring to the boil, simmer for 45 mins.

Remove from heat and blend in blender until smooth and creamy.
