Squash Chili

Ingredients
Butternut Squash - Medium to LargeOlive OilV8 JuiceRed BeansWhite BeansChili PowderOnion PowderCuminPaprikaCinnamon
Directions
Cut clean Butternut Squash in half. Microwave until soft enough to cut. Cube into 1" pieces (removing skin). Saute in pan with Olive Oil and 1 tbsp of chili powder until squash is golden and tender. *Squash will soak up the flavors.* Add beans, spices and V8 juice. Simmer 10 minute, or as desired. Serves 6-10.
