Zucchini Cheese Boats

Ingredients
4 Zucchini , med4 Oz (8 Tbsp) light cream cheese1/2 cup Sharp cheddar cheese1/2 cup (110 g) Monterey Jack with Jalopeno cheese1/2 cup shredded Parmesan cheese1/4 tsp Cayenne1 tsp fresh or dried chives
Directions
Preheat oven to 350 degrees.

Get a large pot of salted water and set it to boil. Cut zucchinis in half to make 8. Take the 8 zucchini halves and put in boiling water for 2 minutes to blanch. Drain and immediately put in an ice bath. Blot off water and make boats out of the halves by using a spoon and scraping out part of the middle. I usually do about 1/3 way down.

Mix cheese, cayenne and chives together in bowl. Divide cheese mixture between the 8 boats. Roughly 1 heaping tbsp per boat. Put the zucchini boats into a lightly oiled baking dish.

Bake 8-10 minutes or until golden brown. I usually bake it for 10 minutes then turn it on broil for another minute to get the cheese golden brown.

You can cut these 8 boats into smaller pieces if you are serving as an appetizer for a get together.
