Crepes

Ingredients
1/2 c flour1/2c skim milk1/4 c lukewarm water2 eggs1 1/2 T sugar2 T melted butter
Directions
Combine all ingredients in a blender and blitze until no lumps are visible. Cover with plastic wrap and let rest for 30 minutes. Heat a 6 in skillet (I find a good seasoned cast iron pan works best) with a little oil. (just dribble some in the pan and swipe it with a paper towel to evenly coat). Pour a small amount of batter in the pan and swirl to coat bottom of pan. Cook for a minute or two until it startsa to set, run a knife along the edge of crepe and flip over. Cook the other side for 1 minute. Continue with rest of batter. Serve with fresh fruit or preserves and a sprinkle of powdered sugar on top. Makes 12
