Asian Pear Pumpkin Soup

Ingredients
Directions
1 cup onion chopped (prefer white)1 1/2 tsp pumpkin pie spice2 Tblsp honey1 Tblsp country crock light spread1 cup Chicken broth2 cups fresh pumpkin puree1 1/2 tsp pumpkin pie spice2 asian pears cored and sliced.
in a microwave safe bowl place 3 cups of raw cubed pumpkin and 1/4 cup water. Secure with serran wrap. Microwave for 8 min..
While pumpkin is steaming..In a stock pot..Sautee onions with butter,honey, and pumpkin spice till translucent.
Remove pumpkin from microwave. Drain. If soft enough use a potatoe masher to mash till smooth or use a blender.
Add pears and pumpkin to stock pot. Stir to coat with honey/onion mixture. Slowly add chicken broth. (works well with vegitable stock too)...Bring to boil. Reduce heat to simmer...Cover and let cook for 20 to 25 min.
Remove from heat. Place a strainer in a bowl. Pour mixture through strainer. Place pears and pumpkin mixture left in strainer in blender.
Pulse blender till smooth. Add broth by spoonfuls to mixture in blender if becomes too thick.
Return broth to pan add pear/pumpkin puree..stir well bring back to simmer.
Makes five 1 cup servings.
*for presentation looks beuatiful with a sprinkling of pumpkin spice on top. and a swirl of plain yogart.
