Slow Cooker Chicken With White Beans

Ingredients
2 cans (15-1/2 ounces each) either Navy or Great Northern beans, rinsed and drained2 carrots, sliced1stalk celery, sliced1 small onion, diced1/2 cup low cal Italian salad dressing1 cup watersalt and pepper to taste-I don't add salt, but I do add a little pepper4-3 ounce boneless, skinless chicken breast tenders
Directions
4-1 cup servings with 1 chicken breast per serving

Place beans, onion, carrots, celery in a 5-qt slow cooker, put the chicken on top of bean mixture. Pour the salad dressing over the chicken. Add salt and pepper, if desired. Pour1 cup water over all.
Cover and cook on low 3 to 4 hours, until chicken is thoroughly cooked.
If substituting dried beans (1 1/2 cups), add an additional 2 cups water, cook on low 6 to 7 hours, until beans are soft.

    Used a whole chicken and added onion, Black Soy Beans, Garlic and some left over Chicken Broth. It needed a healthy (?) dose of salt, and definitely more seasoning. It will be a work in progress. - 10/22/10

    I changed it little. I used 4 medium carrots, a handful of sliced portabellas, a medium tomato, substituted a can of garbanzos, used 2 chicken breasts sliced lenghthways. Only used 3/4 C water. Also added about a tsp of chicken bullion. Cooked on low on stove for 3 hours. Ate over brown rice. - 6/2/13
