Cooked Chicken Breast, shreddedCooked wild riceDried CranberriesMiracle WhipScallionCeleryWater ChestnutsSalt & Pepper to tasteFresh Thyme
Cook wild rice until tender. Steam or broil chicken breast, then shred. Chop up celery and scallion. Cut chestnut slices in half.
After rice and chicken have cooked and cooled, mix with celery, scallions, cranberries, water chestnuts, thyme and Miracle Whip. Salt and pepper to taste.
Chill down for about 1/2 hour. Serve with tomato wedges and lettuce (which are not figured in the nutrion calculations.
