Perfect Pumpkin Soup

Ingredients
2 tblspn Butter1 Onions diced2 Carrots peeled and diced1 Apple peeled and diced2 cups cooked Pumpkin1.5 tsp ground Sage3 cups Chicken stockSalt and Fresh Ground Pepper to taste
Directions
1.) Melt butter, sautee onion, carrot, apple, pumpkin, and sage until all tender, about 8-10 minutes.

2.) Puree mixture in food processor or blender. Place puree and chicken stock into a pot and simmer 15 mins. Do not let boil. Season to taste with salt and pepper.

3.) Divide into 4 and serve immediately.

    All except one liked this soup. I did add some nutmeg and a smidgen of half-and-half to it to make it more "exciting". I will definitely make this again. I added all the ingredients at once and let it simmer before blending it. That way I avoided burning the onions and carrots. - 11/5/09
