Ingredients
1 15 oz canned pumpkin1 spice cake mix 1 tsp pumpkin pie spice1 cup water
Directions
Preheat oven to 350 degrees
mix all ingredients with a mixer
Spray muffin tins or put in cupcake liners
Place mix in each muffin tin
bake for 20 to 25 minutes or until done (will be moist)

This recipe is for 48 MINI muffins if you use a regular muffin tin the nutritional info will be slightly altered

    Very good. I made my muffins a little bigger, and it still made two dozens, so I just doubled the nutrition info. They are indeed moist because of the pumpkin, but overall delicious (especially with a dollop of fat free whipped topping)! - 10/20/11
