Chef Eli's Ratatouille

1 small eggplant, in cubes225 gr. zucchini, peeled, in cubes1 small red pepper1 teaspoons Olive oil1 medium onion, chopped2 garlic cloves, chopped1 large tomatoe, chopped1/4 cup tomatoe juiceFresh basil to tastePepperParsley1/4 teaspoon salt
Heat 1/2 teaspoon of oil on a pan. Add onions and garlic until they are tender. Add the eggplant and cook it for 3 minutes. Set aside on a bowl. Add 1/2 teaspoon of oil to the pan and add the zucchini, let it cook for 3 minutes and put on the bowl with the rest of the veggies. Now add the peppers to the pan, and let them cook for 2 minutes, until they are tender. Set aside.
Add the rest of the oil to the pan. Put the tomatoe juice and the tomatoes and let them cook until they form a sauce.
Mix the sauce and the vegetables. Season with pepper, parsley, salt and basil. Serve hot ot cold.
