Bacon Potato Chowder

Ingredients
12 strips diced turkey bacon2 medium onions6 celery rips, sliced10 medium potatoes, peeled and cubed1/3 cup butter1 cup all-purpose flour8 cups milk2 medium carrots, shredded1 tablespoon salt1 teaspoon pepper
Directions
Cook bacon until crisp. Saute onions and celery until tender. Meanwhile, place potatoes and leeks in dutch oven and cover with water. Brink to a boil, reduce heat, cover and cook for 20 minutes or until tender. Drain; set potatoes aside. In the same pan, melt butter. Stir in flour until smooth. Gradually stir in milk. Bring to a boil over medium heat. Cook and stir for 2 minutes or until thickened. Reduce heat; add onion mixture, potatoes, carrots, salt and pepper. Cook for 10 minutes or until heated through. Sprinkle with bacon. Yiels 12-14 servings (about 3 1/2 quarts).
