crustless pumpkin pie

Ingredients
1 can pumpkin (not pie filling, plain pumpkin)1 can fat free evaporated skim milk3/4 c. egg substitute2/3 cup splenda2 Tsp pumpkin pie spice1 tsp vanilla
Directions
Pre-heat oven to 400. Wisk all ingredients together in a bowl. Pour into pie pan sprayed with non-stick cooking spray. cook at 400 for 15 minutes, then turn down the oven to 325 for an additional 30-45 minutes. Cool. Top with Fat free whipped topping.

    on a side note...1/2 c of pumpkin gives you 25% of your RDA of fiber and it's the good kind...insoluble. So eat up pumpkin lovers. - 11/8/08
