Cheese & Spinach Calzone

Ingredients
Dough1 envelope instant yeast2 tsp sugar1/2 cup lukewarm water1 cup non fat sour cream3/4 tsp salt3 1/2 cups white flourFilling250 grams chopped spinach, cooked and drained1 500 gram container light ricotta cheese75 grams light feta cheese1/2 cup shredded mozzarella
Directions
Make dough as for bread. Divide into 8 balls, and roll out or flatten into circles.
Mix ingredients for filling. Divide amongst the dough circles. Fold dough over and pinch together to close.
Place on cookie sheet and bake at 400 for 20 minutes.

    I made this for dinner last night. It was good, but it needed lemon or some spices to make it more flavorful. Think I am going to put some lemon juice in it next time. - 10/8/09

    I'm making it with whole wheat flour to boost the fiber. I'm adding some capers and black olives to the filling. I also added 2 teaspoons of Italian seasoning (oregano, thyme, parsley) to the cheese mixture. The dough also tastes great if you add some Italian herbs to it as well. - 7/1/10
