Smooth Black Bean Soup

1 T Olive oil1/2 C Diced celery1/2 C minced onion1/4 C chopped green bell pepper3 T chopped carrot1 T minced Garlic1-1/2 t ground cumin1 t dried oregano1 t chili powder1/4 t black pepper2 C broth (vegetable or chicken)1 C Water 3 15 oz cans black beans drained and rinsed - OR - 1 lb dried black beans prepared according to package directions.
1. Heat oil in large saucepan. Saute celery, onion, bell pepper and carrot 10 min.
2. Add garlic and next 4 ingredients. Saute 3 minutes.
3. Add broth, water, and beans. Bring to boil. Reduce heat and simmer for 15 minutes.
4. Blend soup to pure. Garnish with green onions and/or sour cream and/or cilantro. (garnishes not included in nutritional information)
