Loaded Cheddar Potato Soup

Ingredients
2 cups Chicken Broth3 cups raw cubed Potatoes - peeled1 small onion--chopped1 small stalk celery--chopped1/4 cup carrot grated1 tsp salt2 tsp white vinegar1 1/2 cups 1% milk with 2 Tbsp. all-purpose flour1 cup shredded old cheddar (60 grams)
Directions
Bring first 7 ingredients to boil over medium heat,
Cover and simmer 20 minutes stirring occasionally
Whisk milk/flour mixture into hot mixture, stir in cheese.
Simmer uncovered 5-8 minutes or until thick stirring occasionally
