Ratatouille

Ingredients
2 cloves garlic, minced2 red onions, chopped1 eggplant, chopped into bite-sized pieces2 zucchini, sliced2 carrots, sliced2 cans diced tomatoes1 can kidney beans1/2 cup kale, chopped1 cup spinach, chopped1 tsp cumin1 tsp red pepper1 tsp thyme1/4 tsp oregano
Directions
Add the onions and garlic to a large pot, and cook on medium-low for about two minutes (until fragrant). Add the carrots, zucchini and eggplant and cook for another three minutes. Add the rest of the ingredients and let simmer for fifteen to twenty minutes (until all the vegetables are soft). Serve!
