Spicy Coleslaw

Ingredients
8 cups green, napa or savory cabbage shredded1 large green bell pepper, seeded and cut into thin strips1 medium carrot peeled and shredded1/2 medium sweet onion, halved and thinly sliced1/4 cup vinegar1tbsp organic honey1/2 ground ginger (optional)1/2 tsp ground turmeric1/4 tsp celery sedd1 tbsp avocado oilSalt and pepper to taste
Directions
1. place all prepared vegetables in a large bowl. Using claeands, mix vegetables until evenly distributed.
2. In a small saucepan, compine vinegar, honey, ginger (if using), turmeric and celery seed. Bring to a boil over medium heat. When honey is dissolved, remove from heat. Add oil and pou hot dressing over cabbage mixture.
3. Again, using clean hands, toss mixture until dressing is well distributed over vegetables. Cove and refrigerate before seving. Keeps for 3-4 days. Don't worry if slaw changes color-it will take on a golden color over time.
