Lentil & Spinach Stew

Ingredients
Directions
Soak lentils in water; wash quinoa.
Cook lentils in 10 c. broth or water for 25 minutes.
Chop onions and saute' in oil in soup pot until translucent. Add garlic, bay leaves (whole) cayenne, quinoa or bulghar and saute' until starting to brown. Add chopped tomatoes, then tomato paste.
Add lentils and ALL the cookwater or broth.
Simmer for 15 minutes. Add salt and pepper to taste.
Makes at least 12 1 c. servings
