Cajun Chicken Tortellini

6 cups frozen cheese tortellini4 boneless skinless chicken breasts, cubed or sliced into strips24 oz. canned evaporated skim milkred pepper, thinly slicedgreen pepper, thinly sliced1/2 cup green onions, chopped3 tbsp butterdried basilgarlic powderblack pepperlemon pepper (opt.)
Coat the chicken with the cajun seasoning by placing it in a ziploc bag and shaking it around.
Cook the tortellini according to the instructions on the package.
Meanwhile, saute the chicken and butter in a large pot until fully cooked. Add peppers and onions and cook for 2 more minutes. Reduce heat, and stir in the evaporated milk. Stir in all of the spices and heat through.
Add the drained tortellini and serve. Makes about 8 1 1/2 cup servings, I think.
Notes: I did not use the lemon pepper seasoning when calculating the nutrition facts. I used Mrs. Dash tomato basil garlic seasoning for the basil and garlic. You can use any kind of pasta of your choice in place of the tortellini.
