Sesame Tofu

1 Block Tofu, Firm or Extra Firm3/8 c. Agave Nectar1/8 c. Soy Sauce1 tsp. Ground Ginger1 Tbs. Corn Starch1/2 c. Water2-3 Tbs. Sesame Seeds2 Tbsp. Coconut Oil (or Sesame Oil)1 tsp. Crushed Red Pepper Flakes (Optional)1 c. Rice
Preparation:
Freeze Tofu overnight in original packaging and allow to thaw completely. This will make the tofu porous and allow it to accept the flavor better.
1. Drain and press tofu for at least thirty minutes.
2. Begin cooking rice according to package directions.
3. Preheat a large skillet or wok to medium-high heat and place oil in pan.
3. Cut tofu into 1/8"-1/4" rectangles and cut diagonally to form triangles.
4. Place tofu into skillet and lightly fry tofu for about 5 minutes each side until golden brown.
5. Mix together agave nectar, soy sauce, water, corn starch, ginger, and red pepper flakes.
6. Beat mixture with a whisk until no more lumps appear.
7. Pour mixture into pan with tofu.
8. Cook until sauce thickens slightly, adding more water if necessary.
9. Sprinkle with sesame seeds.
10. Cover and reduce heat to a simmer.
11. Cook for ten minutes, stirring occasionally.
12. Serve on top of cooked rice.
