Red Cabbage with Apples

Ingredients
2 cups apple juice or cider2-4 Tbsp. apple cider vinegar1/2 tsp. allspice3 cups shredded red cabbage1 cup grated red applePinch of salt
Directions
In medium saucepan, bring apple juice or cider, vinegar and allspice to a boil. Add cabbage, apple and salt. Simmer, uncovered, 30 minutes, stirring occasionally. Serve warm or cold.

Makes 4 servings (approximately 1/2 cup each.)

    DH made this for me ~ tastes perfect! A nice balance of sweet & tart, with no sugar or oil to add calories. Just like what my Dad used to make (his parents immigrated from Germany).     Tasty way to use the red cabbage i received in my weekly veg box. I used red wine vinegar. I had to replace the apple juice with a more apple + water + brown sugar because i did not have any in the house. - 12/27/10

    Made it last night, as I said I would, and had it tonight. Ended up having it cold - it was like a cabbage chutney, with loads of texture.
    I added a good handful of raisins, used some rosé balsamic and some ordinary dark balsamic (had no cider vinegar), and a small teaspoon of redcurrant jelly. mmm - 8/18/10
