Golden Potato Soup

Ingredients
*Potato, raw, 3 cup diced Celery, raw, 1/2 cup, diced Onions, raw, 1/2 cup, chopped Swanson Chicken Broth 99% Fat Free, 1 cup Parsley, dried, 1 tsp Salt, 1/2 tsp Milk, 2%, 1 cup Fat free half and half, 1/2 cup Ham, extra lean, (5% fat), 1 cup, diced1 Tbsp olive oil2 tsp flour (not calculated--couldn't find)
Directions
1. In a large stock pot add, potatoes, celery, onion, chicken broth, and parsley flakes. Season with salt & pepper and simmer until vegetables become tender.
2. In a separate bowl mix 2 tsp flour and milk. Once it is well blended, add to soup mixture and cook until soup becomes thick.
3. Stir in cheese, cooked ham and simmer until cheese is melted.

Note: saute celery & onion in 1 T EVOO to bring out more flavor

    Tried this for lunch and it was GREAT.....didn't have any ham or the cheese so I subistuted carrots and it was still very yummy! - 1/10/09

    I was a little confused. Cheese wasn't listed in the ingredients so I didn't know how much. Then it didn't say when to add the half & half. Tasted pretty good though. Kids loved it. - 11/9/08

    oh oh--so sorry--I used a cup and a half of cubed velveeta cheese--the original recipe called for 1-1/2 c of shredded american cheese. And I added the 1/2 & 1/2 at the same time that I added the milk.

    Fluid was not enough I added 1 more cup. I added 1/2 c carrots . I sauted all the veggetables with the meat. The simmer until potatoes were done. I did not use the flour. I just ran my potato masher thru the soup a few times to thicken.

    I want to apologize to everyone--when I tried to convert this recipe to a healthier choice, I left out the calculations and nutritional information for the cheese--it called for 1-1/2 c shredded American cheese--that brings the calories and fat up a whole lot more than orignally reported--sorry.
