Loaded Baked Potato Soup

Ingredients
1lb Red Potatoes, cubed1 Can Fat-Free reduced-sodium chicken broth1 cup 1% milk3 slices bacon, cooked and crumbled (I used the precooked kind)1 cup Shredded cheddar cheese1 green onion, sliced1/4 cup Light Sour Cream
Directions
Microwave potatoes in large microwaveable bowl on hight for 5 mins, stirring after 2 1/2 minutes. Stir in broth & milk. Microwave 10 min, stiring after 5 mins. Carefully crush potatoes with potato masher.

Reserve 2 Tbsp each bacon & cheese and 1 Tbsp for topping. Stir remaining bacon, cheese and onions into soup.

Serve topped with reserved bacon, cheese, onions and sour cream.

*I didn't reserve anything for the topping and just mixed it all together...worked just as well!*
