Traditional lentil soup

Ingredients
1 large onion chopped2.5 tbsp oil3 tbsp tomato paste1 tsp cinnemon1 tbsp ground corriander2 tsp ground cumin2 cups/ 340 grams brown lentils3 large/ 335 grams carrots chopped3 medium/ 320 grams diced potatoes3 cloves garlic choppedChopped parsly.Salt and pepper to taste
Directions
1. Heat oil and cook the onions on meduim heat until they are turning brown.
2. While the onions are cooking soak the lentils in warm water, chop the garlic, potatoes and carrots.
3. When the onions are turning brown add the tomato paste and mix in the spicesand garlic. Stir until the tomato paste is turning slighly brownish.
4. Add about 3 litres of water.
5. Drain and rinse the lentils and add the lentils and bay leaf to the pot.
6. Cook covered for about 40 min.
7. Add the potatoes and carrots and cook another 30 min or until they are soft.
8. Add salt and pepper to taste.
9. Serve with chopped parsly.

    This is a really great recipe, but there is a problem with the nutritional data. The lentils used are COOKED lentils - this is a SparkRecipes problem. They do not label raw/cooked for most of the grains! If you check nutritional data online, you'll find the correct amount for raw lentils. Sorry! - 7/19/11

    I made an adjustment to my intro. I don't know if you saw it. The soup makes about 3 litres depending on how thick or watery you make it. I calculated that 3 litres=12 cups and 1 cup/250 ml is one serving.
