Winter Squash Turkey Miniloafs

20 oz package of ground turkey breast1 package cooked frozen squash, thawed and drained1 cup finely chopped onion1 cup finely chopped bell pepper1/3 cup whole grain couscous1 large egg2 tbsp worcestershire sauce1 tbsp dijon mustard1/2 tsp salt1/2 tsp pepperBBQ sauce to top, OPTIONAL
Preheat oven to 400 degrees
Start by combining squash, bell pepper, and onion in a medium mixing bowl. mix in couscous, egg, worcestershire, dijon, and salt/pepper. Once thoroughly combined add turkey and quickly mix, being careful not to overwork the meat.
Spoon approximately 1/4-1/3 cup of meat mixture into regular sized non-stick muffin tins.
Top with 1-2 tsp BBQ sauce if desired (Not included in nutritional information).
Bake for 20-30 minutes until an interior temperature of 170 degrees is reached. Makes about 18 individual mini-loaves, 2 mini loaves per serving
