beet,celery and carrot salad

Ingredients
1 cup sliced beets1/2 cup sliced celery1/2 cup sliced carrots1 1/2 Tbsp red wine vinegar2 tsp extra virgin olive oildash saltdash freshly ground pepper
Directions
serves 2
combine the vegetables, add vinegar and oil. sprinkle with salt and pepper. toss and serve.
I prefer fresh beets but this can be made with canned beets as well.
