Mel's Cornbread stuffing

Ingredients
Ingredients: * Cornbread, 8 oz ( you can use old leftover cornbread muffins) (remove) * Baby Carrots, raw, 10 large (remove) * Celery, raw, 2 stalk, medium (7-1/2" - 8" long) (remove) * Onions, raw, .5 cup, chopped (remove) * Chicken Broth, 1 cup (8 fl oz) (remove) * Water, tap, 1.5 cup (8 fl oz) (remove) * Olive Oil, 1 tbsp (remove)
Directions
heat olive oil in skillet add onions and start to carmelize add celery and carrots cook until just soft. combine bread and water and broth with veggies and any seasonings . mix well, be careful not to break down bread to much. put into a pan and bake for about 30 minutes.

    This was a good recipe. Made for Thanksgiving and it was okay...today made it without the water and added 1/2 tsp of poultry seasoning. Made 1/4 cup servings...we put in muffin pan to bake to make easier for servings. Thanks for sharing this. - 12/24/09
