Buffalo Chicken Nuggets

Ingredients
4 Boneless Skinless Chicken Breast halves1/4 cup Frank's Red Hot Sauce (*NOT* wing sauce)2 servings - Shake n Bake Coating1/2 Cup - Fiber One CerealPLEASE NOTE: Wing sauce has added fat, use plain 'hot sauce' for lowest calorie/fat content.
Directions
1. Preheat Oven to 375f


2. Cut chicken into nugget size pieces and place in bowl with hot sauce. Stir occasionally and allow to marinate several minutes while you prepare the coating (or place in frige for longer.)


3. Crush Fiber One cereal (you can place it in a heavy plastic food storage bag and crush with a rolling pin or heavy pot or mug) or pulse in a food processor.


4. Combine Fiber One and Shake-n-Bake and mix well.


5. Remove chicken from hot suace. Allow sauce to drip off and roll chicken in crumbs/coating mixture. For best results do a few nuggets at a time. You want to coat fairly well, but not use up all the coating to quickly.


6. Place chicken nuggets on non-stick baking pan or non-stick foil lined pan. Bake appox. 15-20 minutes or untill chicken is done and coating is crisp. Exact time will depend on the size of your nuggets. You may wish to turn the nuggest over half way through cooking to assure that the crust becomes crisp.


Makes 4 entree servings or lots of appetizers. Serve with fat free or low fat honey mustard, ranch or blue cheese dressing for dipping.


** You can use whatever 'coating' mixture you prefer - Shake-n-Bake, Fiber One, fresh light bread crumbs, crushed reduced-fat cracker crumbs, etc. But the content of your coating will affect the final nutritional information. This recipe is calculated with the combination of SnB and Fiber One.

    SOOOOOOO GOOD! I didn't have fiber one, so i added some seasoned bread crumbs. But I also added some cayanne peppers...GOOD SPICE! I used two dips, FF Ranch and a mix of greek yogurt with salsa! THIS WAS GOOD! - 7/24/09

    This. was. awesome. I used seasoned breadcrumbs and grocery store brand buffalo wing sauce (5 calories per tbsp, no fat). Hubs and me loved it and it was so easy to make. I used healthy garlic ranch dressing (search it in recipes) as the dip and with a side salad. Completely awesome! - 5/4/14

    I used a combination of whole grain bread and reduced fat wheat thins, they were good. I am letting the other half of the chicken marinate over night so they will have more flavor. I tossed them into a salad with craisins and blue cheese crumbles, topped with low cal italian dressing...delicious! - 2/10/10

    We really liked this recipe. Some of the nuggets were a bit "soggy" so next time, I'll flip the nuggets before done. I'd also consider adding some garlic or something to counter act the sweetness of the bran cereal. Definitely making again. - 6/18/07
