Chicken and Zucchini Stir Fry

Ingredients
1.25 lb. Chicken, cut into 1 in. pieces3 Small Baby Zucchini, sliced1/2 Medium Red Onion, diced1 t. Curry Powder2 t. Garlic Pepper1 T. Olive Oil2 T. Lite Soy Sauce
Directions
Combined all ingredients in a medium skillet, stir and cover. Stir fry on medium high heat for 12 minutes or until chicken is cooked through and vegetables are tender. Serve over rice for additional (not calculated in nutritional values)
