Julee's Blackeye Pea and Corn Salsa

1.5 cups dry blackeye peas1 cup frozen corn1 jalapeno pepper (or to taste) - Green chile can be substituted for this.1 tbsp dried onion1/4 tsp garlic1 tsp salt 3 strips bacon, sliced into strips (I used cooked because that's what I had)1 can stewed tomatoes
Soak and cook the blackeye peas according to package directions. Add the bacon during cooking. Once the blackeye peas are tender, reduce heat and allow to simmer for a while to reduce the soup.
Add the corn, jalapeno, onion, garlic, salt and tomatoes. Simmer til hot.
Makes about eight 1/2 cup servings or four 1 cup servings (nutritional information is for 1/2 cup servings).
