2 cups flour1/2 salt3 tsp. baking powder2 tbsp. extra virgin olive oil2 tbsp. sugar2 eggs1 1/2 cups milk
Add all the dry ingredients (flour, salt, baking powder, sugar, and the packages of instant oatmeal) in a bowl, and stir together. Make a little hollow in the middle, and add the wet ingredients. Mix together - you may have to add a little more milk to make it thin enough. Mix it until there aren't any visible lumps left. Pour onto a non-stick, hot griddle - you should have enough for 12 small to medium pancakes. Flip the pancake after the entire thing looks bubbly, and the edges are cooked, and continue cooking until done.
