Spinach & Feta Rolls

1 TBLS Olive Oil3 TBLS Onion, Chopped4 Cloves Garlic, chopped, or put thru a garlic press6 cups Baby Spinach, chopped12 oz Athenos Reduced Fat Feta Cheese16 sheets Athens Fillo (Phyllo) Dough
Heat Olive Oil in large pan, add Onion and Garlic and saute just a few minutes. Add Spinach, cook until wilted. Shut off burner and add Feta Cheese.
Separate Fillo Dough sheets into 4 stacks of 4 each. Lightly brush the top of each stack with butter. Divide Spinach/Feta mixture evenly onto each stack of dough at one end. Roll up mixture in dough much like when making egg rolls. Place on parchment seam side down. Brush lightly with butter.
Bake at 350 degrees for about 20-25 minutes or until lightly brown. Serve warm.
As an alternative, you can make these as appetizers. Use individual sheets of the Fillo Dough and roll into long sticks, Keep filling about 1/2" from open ends as it will ooze out when baking. Baking time will be less, just keep an eye on them.
