Roasted Parsnips & Rutebagas

Ingredients
3.5 cups peeled, cubed rutebaga3.5 cups peeled, cubed parsnips1 cup chopped onion1/4 cup extra virgin olive oil1 tbsp chopped fresh sage1 tbsp chopped fresh rosemarycoarse sea salt and fresh ground pepper to taste
Directions
1. Preheat oven to 425
2. Mix all ingredients together well in a bowl
3. Spread on cookie sheet/ roasting pan lined with parchment paper
4. Bake until desired tenderness - 45 minutes or so, mixing halfway through
