Dosai, Indian lentil pancake

1 7 oz. package of Dosai Mix (200 g)2 cups water3 tsp olive oil in a Misto Spray, or Pam
I only use a scant 1/4 cup of batter per dosai, so I stretch the mix to make about 12 small pancakes.
1. Add the dry mix to 2 cups of room temperature water, and stir until smooth. Set aside for 5 minutes to let the baking soda activate.
2. Evenly spray a flat non-stick tava/griddle with about 1/4 tsp oil. Heat on medium flame.
3. When the pan is hot, pour 1/4 cup batter in center and spread quickly outward in a spiral motion (like making crepes) to form a thin pancake about 4-5 inches in diameter. If it sticks at the edges, dot with a little bit of extra oil and cook till golden brown. Using a spatula, carefully fold the Dosai over and lift off the griddle.
Serve hot with chutney or spicy condiment, along with lentils or beans or even a meat dish, in place of bread.
