choc zucchini muffins

Ingredients
3 egg whites1/2C applesauce1/3C brown Splenda1tbsp vanilla1C shredded zucchini1 1/4C whole wheat flour1/4C cocoa1tsp cinnamon1tsp baking powder
Directions
Mix dry ingredients, add remaining except zucchini. Fold in Zucchini. Divide between 12 prepared muffin cups. Bake at 350* for 20 minuites.

    These were horrible, I'm not much of cinnamon fan so perhaps without the cinnamon the taste would be marginally better, but they were extrememly dry, and I added extra moitsure (to no avail). - 7/4/07
