1-20 oz can of crushed pineapple with juice(unsweetened)1/2 C sugar2 med eggs(beaten)1/8 C corn starch(I use 2 Tablespoons)1 tsp vanilla
Mix the cornstarch well with the sugar and set aside. Beat the eggs and add the vanilla and pineapple. Slowly stir in the sugar mix and place in a greased casserole dish. Sprinkle with cinnamon and bake at 350 for 1 hr. Serve warm, I have it serve 10 as we use it more like a condiment than an actual side dish. But, even if you serve 5 with it, the numbers are still low! Enjoy!
